Beef Enchiladas Recipe | Finest Comfort Food

This beef enchiladas recipe is the ultimate comfort food, rich, savory, and packed with bold flavor. Wrapped in soft corn tortillas and smothered in a hearty chili or enchilada sauce, this classic dish brings together the best of Mexican tradition and Tex-Mex flair. While enchiladas date back to ancient Mesoamerican cultures, the addition of beef and melted cheese reflects a delicious evolution influenced by both Spanish and Southwestern kitchens. Whether you're making them for a weeknight dinner or a festive gathering, this beef enchiladas recipe delivers warmth, satisfaction, and a little taste of history in every bite.

Ingredients for Beef Enchiladas Recipe

  • 1 pound ground beef (preferably chuck for flavor)

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 15-ounces can refried beans

  • 1 10-ounces can red enchilada sauce

  • 1 4-ounces can diced green chilies

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • Salt and pepper to taste

  • 8 small flour tortillas (or corn tortillas, if preferred)

  • 2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)

  • Fresh cilantro, chopped (for garnish)

  • Sour cream (for serving)


Instructions for Beef Enchiladas Recipe

  • Preheat the Oven: Preheat your oven to 375°F (190°C).

  • Cook the Beef: In a large skillet over medium heat, add the ground beef. Break it up with a wooden spoon as it cooks. After about 5 minutes, add the diced onion and cook until it’s translucent, around another 5 minutes.

  • Add Flavors: Stir in minced garlic, green chilies, cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until the garlic is fragrant, then remove from heat.

  • Prepare Tortillas: While the beef mixture cools slightly, warm the tortillas in a dry skillet or microwave for about 15-20 seconds until they are pliable.

  • Assemble Enchiladas: Spread a couple of tablespoons of refried beans on each tortilla. Add a scoop of the beef mixture followed by a sprinkle of cheese. Roll up the tortilla tightly and place seam-side down in a greased baking dish.

  • Layer them Up: Continue this process for each tortilla until the dish is filled. Pour the enchilada sauce evenly over the top of the rolled tortillas, ensuring they are fully coated. Sprinkle the remaining cheese on top.

  • Bake: Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

  • Garnish and Serve: Remove the enchiladas from the oven and let them cool for a few minutes. Garnish with fresh chopped cilantro and serve hot with sour cream on the side.
