Migas with Chorizo

Breakfast is a time to gather, and in Mexican tradition, migas is a favorite dish that turns simple ingredients into something unforgettable. This version with chorizo brings extra flavor—crispy fried tortillas scrambled with eggs, onions, and smoky chorizo, then topped with your family’s favorites like salsa, queso fresco, or avocado.
For Día de los Muertos, migas make a perfect way to start the day by honoring loved ones with a meal rooted in comfort and memory.

Ingredients for Migas with Chorizo
1 cup Chorizo
1 cup Vegetable oil
5 corn Tortillas
½ cup Onion diced
4 large Eggs
½ teaspoon Ground cumin
½ teaspoon Salt
½ teaspoon Black pepper
Optional toppings:
Salsa
Queso fresco or Shredded cheese
Pico de gallo
Jalapeno
Cilantro
Avocado
Instructions for Migas with Chorizo
Cook the chorizo in a nonstick skillet over medium heat until it is fully cooked. Remove it from the skillet and place it in a bowl lined with paper towels to help absorb the excess grease.
Pour the vegetable oil into the skillet and allow it to heat up over medium heat. While the oil is heating up, cut the tortillas into about 1 inch pieces, or strips.
Once the oil is hot, carefully add the cut up tortillas into it. Fry the tortillas for about 5 minutes, turning them frequently until they are golden brown and crispy.
If there is too much excess oil after the tortillas have been fried, you can drain it into a glass jar or bowl. Leave the tortillas in the skillet and add your diced onion. Saute for another 1-2 minutes.
Now crack your eggs directly into the skillet. Use a wooden spoon to scramble the eggs with the tortillas. Once the eggs are cooked through, add the chorizo back into the skillet.
Now add in your seasonings: cumin, salt, and pepper. Mix everything together until it is fully incorporated.
Serve with your favorite toppings!
✨ Tradition Tip: Migas are as versatile as they are comforting—every familia (family) makes them differently. Some add leftover salsa, others a sprinkle of cheese, and many swear by avocado on top. Put out bowls of toppings and let everyone build their plate just like abuelita (grandmother) did.
